We all know I like homemade stuff, I wrote a very ‘homemade’ heavy post when I shared my Old Bay Seasoning with you. You should go and check it out…it is filled with my daily disasters 😉

Seriously it is one of those posts that when I read it back I think. Ha the world must just think I am crazy!!! And it is worth a read as the recipe is used in the most amazing steamed shrimp/prawn recipe. Just thinking about it is making me dribble!!! (Shhhhush! We all do it 😉 )

Anyway, compared to the Old Bay Seasoning this herb blend isn’t packed with disasters. It is a case of measuring out the herbs, putting them in a container and shaking it. Not really a recipe at all 😉

Have you seen the packets of spice blends in the supermarket, often they are a few bucks, contain rice flour, various preservatives, sugar and salt. When I make my own I don’t add salt. I like to salt my chicken separately. Sometimes with a bit of sea salt before it cooks, or perhaps some smoked salt flakes at the end. Once you are in control the possibilities are endless! 🙂

Last week after I mixed up a new batch of this seasoning, I roasted up a double batch of chicken pieces with a couple of extra twists. Roast chicken for dinner and a tray ready to gift to a friend. A few more pics and a recipe coming tomorrow for you.

But this blend is so versatile, it is great mixed into chicken mince for delicious meatballs or burgers. Add some to breadcrumbs to make your own homemade nuggets. Or ignore the chicken completely and sprinkle this over some chopped potatoes and onions before you roast for a super simple and knock out side dish!

Servings: 3 AU TBSP

Ingredients
  • 1 1/2 tbsp ground sage
  • 3 tsp dried thyme
  • 3 tsp dried marjoram
  • 1/2 tsp dried mint
  • 1/2 paprika
  • 1/2 teaspoon ground black pepper
  • 1/4 tsp cloves
Instructions
  1. Mix the herbs together and store in an airtight container.
Recipe Notes

Makes 3 AU tbsp which is enough for at least 20 pieces of chicken.

    Hi Claire! I don’t buy any spice blends because there is always way too much salt for our taste and then there are those ingredients you can’t pronounce! And it is nice to customize them to your own tastes.
