First day back at school for the summer term and it is Tuesday so both my boys were at school today. They were super excited to get back to school and see friends and I was pretty excited to have a day to catch up on 2 weeks worth of boy created carnage. I'm not a tidy person, but they are worse!
As a bit of a back to school treat I made them pancakes for breakfast, I had thought I might get a nice picture of the short stack, they looked great dusted with icing sugar and blueberries tumbling off them. NO such luck. The moment they saw them they were up at the table with plates and cutlery at the ready. So no pancake recipe and pictures today, just means I'll have to make another batch soon 😉 I had coffee and managed to snaffle a few blueberries! I wasn't that hungry and I was looking forward to a leisurely brunch once they were at school.
First day back and we were ready early! At quarter to 8 both boys were dressed, in shoes, lunch packed and water bottles filled. Early! That is not something that happens in this house. Ever! So I spent the next 20 minutes trying to work out what I had forgotten. I think I asked Mr 7 ten times if he had brushed his teeth. I had forgotten how hard it is to get two children into the car for school. Cries of "Oh I just need a book" and "can I take my Lego in the car" and even louder "No just get in the car" filled our house and garden this morning.
We finally made it to school and they ran off, happy to be back. Time for another coffee. Which turned out to be free due to my reward card. Free coffee, that is pretty much the best type of coffee!
Next stop was the supermarket where I did the food shopping without once having to say "no put that down" and I didn't have to check over my shoulder during the whole trip. Luxury 😉
Our local Woolies is going through a major overhaul, today I walked through a tunnel to get to the new fruit, veg, bread and fresh meat area. It's not finished but it looks pretty good so far, assuming the tunnel is going ;-).
Unfortunately I think moving the fresh food into the new area has meant they have kept stock low. I had been hoping to make myself some Korean pancakes for brunch but with no spring onions and no radishes I decided against it and opted for avocados instead. It was as if the food gods were guiding me as Tasmanian smoked salmon was on special (Over $5 off!) so I moved from Korea to Modern Australian and made myself a delicious brunch of avocado spread on granary toast with smoked salmon and a poached egg. I finished the whole thing off with an extra spicy Virgin Mary.
All in all, not an exciting Tuesday but a lovely relaxing one. What have you been up to today?

📖 Recipe
Toast with Avocado Spread, Smoked Salmon and a Poached Egg
Ingredients
- 2 slices of granary bread
- 1 avocado
- 1 teaspoon lime juice
- pinch of salt
- 2 eggs
- 4 slices of smoked salmon
- black pepper
Instructions
- Put the the bread in the toaster.
- Cut the avocado in half and remove the flesh into bowl. Use a folk to mash it up.
- Mix together the lime juice and salt then add to the avocado.
- Spread the avocado onto the toast.
- Put a small pan of water onto boil.
- Once it comes to a boil turn the water down to a low simmer.
- Crack your first egg into a saucer.
- Give the water a gently stir and slide the egg into the water.
- Repeat with the second egg.
- Cook the eggs for 3 minutes. Make sure you time them, 3 minutes goes really quickly.
- Remove with a slotted spoon and drain on a tea-towel
- Place two slices of salmon on each slice of toast and top with an egg.

Perfect. I used your recipe because the Aussies know their avo toast. Only thing I add sometimes is a bit of home pickled red onion.
You remind me so of my Aussie friend Louise, who lives in Sydney's Inner West. I don't think she would think of making herself avocado toast for brunch without a spicy loody Mary!
Making this for brekkie tomorrow, sadly without the Bloody Mary.
