Open-faced, hot turkey sandwiches are the ultimate leftovers dinner!!! Perfect for those days after Thanksgiving or Christmas when you have lots of leftover turkey and no inclination to cook.

These are delicious and comforting. Plus, you can add any extras that you like. For example, I love to add leftover stuffing (as that is my favorite bit of the whole dinner!!), but a standard open-faced sandwich is just some good bread, butter, turkey, and gravy.

These are perfect for a lunch or late-night snack, or add some leftover veggies to the plate, and you have a quick dinner. Kids LOVE these as it includes the best bit of Thanksgiving and bread!

Open Faced Turkey Sandwiches are the perfect way to use any leftover turkey you have during the holiday season, but for the rest of the year, if you grab some sliced turkey from the deli counter, this makes a quick and easy dinner.

    Ingredients

    • Bread- any bread will work, but I like to use a thick slice of country loaf. French bread would be great, or if you have leftover rolls, then slice on open and use that. Really any bread works, even standard sandwich bread.
    • Turkey- the perfect way to use up your leftover turkey. But you can buy sliced turkey from the deli if you don't have any leftovers. You can use slices of turkey, shredded turkey, or chunks of turkey.
    • Gravy- if you are making this during the holidays, then there is bound to be a bit of gravy left over. That is perfect, but if not, you can make my easy brown gravy. It is seriously delicious!

    Additional Ingredients

These are all optional; add what you have/what you like. If you have yet to make any of these, you can click on over to each post and grab my recipes.

    • Stuffing- add a layer of stuffing to your bread and pop it under the broiler to get warm and crispy. Or heat it in the microwave first and then add it to your bread. Soooo good.
    • Mashed Potato- warm it in the microwave and add a layer to your bread before you add the turkey.
    • Vegetables- warm them with the gravy and spoon them on with the turkey. Or mash them together and use them as a layer under your turkey.
    • Carrot and Rutabaga Casserole- one of the best thanksgiving sides! And delicious as a layer on your open-faced turkey sandwich.
    • Onion Casserole- if you have already been introduced to the wonders of my onion casserole, then you will know that it makes a great addition to just about anything. Try adding it to the bread/toast. Amazing!

How to make open faced turkey sandwiches

    1. Pour the gravy into a skillet and heat it until it is bubbling.
    2. Reduce the heat to low and add the turkey. Heat gently until the meat is hot.
    3. Toast the bread. You can do this in the oven, under the broiler, or in an electric toaster or toaster oven. This step is optional, but I like the crunch it gives.
    4. Add any additional ingredients to the bread.
    5. Spoon on the turkey and then pour over the gravy.
    6. Enjoy
