This lychee and ginger cocktail is perfect all year round! The lychees give it the refreshing early summer feel, and also a celebratory Christmas feel (I don't know why lychees make me think of Christmas!) but the ginger warms it up a little making it perfect for fall. So I think that means it would be rude not to drink these every month! I mean when the world gives you a cocktail that is perfect for every season, you should take that and run!!!!
Tonight (Friday night) seems to have been a long time coming!!!! The boys have been back at school this week, but I have had several jobs on and haven't been in bed before midnight all week, well apart from Tuesday night when I felt pretty crook! I was shivery, sweaty and had a headache that felt like I had been standing next to a speaker at a Guns and Roses concert! (Oh I am old!)
On Wednesday I thought I would boost my immune system with some ginger and a dose of vitamin C. I also thought I would cheer myself up with a cocktail.....So I combined them! Totally worked!!!! Just call me Doctor Claire 😉

I used this syrup in my lychee ginger fizz....which I am pretty certain I could drink out of the bottle! Not saying I have done that you understand...just that I think I could....you can't prove anything!!!
My ginger syrup comes from The Ginger People. They sent me a box of goodies the other week. Which I snapped pictures of, as I knew they would find there way into my recipes!!! So much gingery deliciousness!!! The syrup is thick, sweet with a touch of ginger fire. So good!!!!!
I usually make my own ginger syrup, but this is so convenient and did I mention so good!
So, yes, I made a lychee ginger fizz, sat in the garden watching the sun set and Lulu attack a rather defenceless oven glove that she had managed to pull off the clothes horse. I should have stopped her but it was too funny to watch her with it 😉 And it has already been slight destroyed by the boys....For some reason one day, they decided to make a video of 'Mr Glove' and my oven glove got eyes, nose and mouth drawn on him!!! Boys...Go figure!! (It was actually quite funny! Although the smily face on one of their school socks.....not so funny!
Which has nothing to do with my ginger fizz!!! I am all over the shop tonight! Perhaps I should just show you more pics of said ginger fizz aka the scrumdiddly cold curing cocktail and call it a night!

Lychee Ginger Fizz
Ingredients
- 60 ml /2 fl oz lychee liquor (see notes)
- 45 ml /1.5 fl oz ginger syrup (available at most specialty liquor stores)
- squeeze of lemon
- dry sparkling wine
- peeled lychee (I get mine from a tin!)
- fresh mint
Instructions
- Pour the lychee liquor into two champagne flutes.
- Add the ginger syrup and the squeeze of lemon then stir well to combine.
- Top up the glass with the sparkling wine and stir carefully.
- Garnish with a peeled lychee and a sprig of mint.

Hi Claire! A cocktail for all seasons and it's a cure for a cold...what more could one ask for!! The only lychee I've ever seen was tinned and they are quite tasty!

We sometimes see them fresh, but not very often. Well certainly not here in WA, I think they are pretty common over in the tropics of QLD.
Tinned ones are pretty good for this, just a little bit of the juice can really change a drink 🙂
