What is a Lamb Porterhouse?
Lamb Porterhouse is the name for a cut of lamb; it is generally only used in America. The lamb porterhouse is also sometimes referred to as lamb loin chops. It is made from a cut of meat from the leg and loin. It is an excellent cut of lamb because it has plenty of marbling, so it will be tender and flavorful when cooked.
Lamb porterhouse looks like a mini T-bone steak. This is because they have both the loin and fillet part of the meat as part of the chop.
The ones you see that look like a single cut from a rack of ribs (like a meat lollipop) are Lamb rib chops. If you want to cook those, check out my recipe for lamb lollipops.
Are lamb chops easy to cook?
Lamb porterhouse is an excellent cut of meat! They are so easy to cook with as they taste fantastic medium rare, medium, and even when cooked through, they still have great flavor!
I would recommend going for medium-rare to medium as this is when they are the most tender.
What does Lamb Porterhouse taste like?
Lamb chops have a distinctively meaty, robust flavor. It isn't a strong flavor like game, but it isn't a mild flavor like chicken. Instead, think of it like as similar to beef steak - savory and delicious.
These lamb chops are rubbed with garlic and rosemary and left to marinate. This adds extra flavor and also keeps them juicy and tender.
Can you buy lamb at the grocery store?
Lamb is a popular meat in many parts of the world. It is expensive here in Australia, but the availability and variety of cuts are quite large. It is a very popular meat in the UK, and you can get most cuts in even a small grocery store.
In the US, you can buy it in the grocery store; the selection isn't as vast as that of beef or chicken. But you will find porterhouse/loin chops and rib chops in most stores.
How to cook lamb porterhouse on the stove.
- Marinate the lamb chops in garlic, rosemary, olive oil, salt, and pepper. Give it a minimum of 30 minutes, but all day would be better. You can leave it for up to 24 hours. If you are marinating for just 30 minutes to an hour, keep it covered on the counter. So it comes to room temperature. Any longer than that, keep it in the fridge until 30 minutes before you want to cook it.
- Allow the lamb to come to room temperature. Before you start to cook, remove it from the refrigerator and leave it on the counter for 30-60 minutes, depending on the weather and season.
- Place a large skillet or griddle pan over medium-high heat until hot.
- Add the chops (no need for oil) and cook for about 3 minutes on one side, then turn over and cook for another 3 minutes on the other side.
- Remove chops to a plate, cover with aluminum foil and let the chops rest for 5-10 minutes.
- While the chops are resting, add the butter to the skillet and allow it to melt into the juices in the pan. Pour this over the lamb before serving.
What to serve with Lamb Porterhouse
You can serve lamb chops like a steak, pork chop or grilled chicken breast. So pick your family's favorite side dishes. Some suggestions would be:
What wine to serve with Lamb Porterhouse
Lamb is more commonly paired with red wine. A medium-bodied red wine such as a Chianti or Merlot. Both can balance the richness of the meat and the smoky notes.
For those who prefer a white, try an oaked Chardonnay or a Viognier. The rich buttery wine works with the lamb.
