Who doesn't love Peri Peri! This wonderful mix of herbs and spices turns chicken, steak or vegetables into a mouthwatering meal!
With this homemade Peri Peri Seasoning, you can have those delicious flavors at home. The mixture is made up of a few easily available spices. You may well have them all in your pantry already!
This mixture will keep in the pantry or store cupboard for at least 6 months. So you can make a big batch up and use it throughout the coming months! Let's get mixing!

To make your Peri Peri Seasoning you'll need:
- Sugar
- Paprika
- Onion Powder
- Garlic Powder
- Ground Coriander
- Salt
- Dried Oregano
- Dried Parsley
- Ground Ginger
- Ground Cardamon
- Smoked Paprika
- Cayenne Pepper
(For a full list of ingredients with measurements see the recipe card below.)
These herbs and spices all mixed together in a jar and you are ready to use! How easy is that?!?!
Is this Peri-peri seasoning spicy?
The level of spice is completely up to you here! You can change the amount of cayenne pepper in the recipe to suit your family's tastes.
I make this quite mild because guaranteed if I serve spicy food my youngest will stick his tongue out and try and cool it in his water glass, which will lead to my eldest saying "It's not spicy, you are just being silly" and before I know it I have feuding brothers on my hands and spilled water. (anyone else's family dinner go that way? Please??)
Traditional Seasonings
The recipe uses cayenne pepper to get its spice, traditionally this would have been ground Piri-Piri pepper. I find this much harder to find so I add cayenne as a substitute.

How to use Peri peri seasoning?
This mixture is wonderful rubbed into chicken or steak. Or try sprinkling it over veggies before you roast them. My Peri peri traybake is coming tomorrow!
It also makes a great seasoning for stirring through mayonnaise to make a quick and easy dip for your fries!

I love all of these spices and this recipe gave me the courage to use them all at once! No regrets. I'll be reaching for my peri peri blend all the time.
Elizabeth S says
Seriously the BEST seasoning blend I have ever made. At first I thought it was too many ingredients and was going to taste odd but I was wrong. I put this on everything and plan on gifting it at Christmas time!
Sarah says
Yummy spice blend.
I accidentally put too much Cayenne oooops (I liked it, but the mother in law was not a fan).
Will make it without next time, I'm sure it will still be amazing.
I also omitted the cardamon as I didn't have any, would love to see how it tastes with it next time.
Claire | Sprinkles and Sprouts says
Ooops, I'm glad you still enjoyed it 🙂

I wasn't a huge fan of this unfortunately. Did not taste like peri peri and not spicy at all even though I added over twice the cayenne. I will use it but I didn't see the need for the sugar either. Made the dish I was using it in quite sweet even though I'd used half the sugar.
Nonetheless, thank you for sharing.

Hello Claire,
Wanted to thank you for such a wonderful recipe! It became a staple in my kitchen and I cannot imagine my cooking without it. I use it with poultry, pork, beef and even fish. My whole family is always looking forward to the dishes, where I am using your peri-peri seasoning. Thank you also for the peri peri chicken recipe, where you use this seasoning. Together with orange juice - it makes chicken heavenly delish.

Used this peri peri seasoning for our steak and it was a hit! I had to adjust the level of spice for the children. Must-try!
Thomas Harrigan says
This looks great and I'll have to try it. I know some recipes add lemon and/or lime peel to add some zest. How do you get the nutrition info? Do you have to send out to a lab? Thomas
Claire | Sprinkles and Sprouts says
My recipe card software calculates the nutritional information based on average values for the ingredients.
I think some dried zest would be a great addition 🙂

If I want to cook
2 lbs chicken how many TB spoon should I use?
Andy
Claire | Sprinkles and Sprouts says
Hi Andy,
I would use 4-5 tablespoons for that much chicken.
I usually use around ½-1 tablespoon per chicken breast depending on the size.
Hope that helps

Please check yourself before you wreck yourself this is Not Peri-Peri
It’s Sugar, Salt, Paprika, Tomato Powder, Dried Onion, Dried Garlic (4.5%), Black Pepper, Acidity Regulator (Citric Acid), Parsley, Rapeseed Oil, Ground Coriander Seed, Oregano, Ground African Bird's Eye Chilli, Cayenne Pepper, Cumin, Anticaking Agent (Silicon Dioxide), Nutmeg, Colour (Paprika Oleoresins).
Claire | Sprinkles and Sprouts says
That is a store-bought blend that is packed with sugar, salt and chemicals.
Feel free to use it, but I prefer my homemade version (and the recipe was given to me by my Portuguese neighbour)

Stan Kaplan says
Didn't try it, threads make it too annoying to continue.
Bart says
Both the cardamom and onion taste was way too overpowering with these quantities. Did not taste that good unfortunately. Might be because of different quality in spices.
JOXA says
GOD DAMN THIS SEASONING IS BANGIN STRAIGHT SLAPPIN 💥💥💥🤯🤯🤯😍😍😍🔥🔥🔥
Shanequa says
Could I use fresh parsley and coriander since I don’t have any dried?
Claire McEwen says
If you don't have dried herbs would leave them out of the seasoning blend, and then when you use it, add some finely chopped fresh herbs. Adding fresh herbs to the blend will make everything damp.
Hope that helps 🙂

Dry says
You could always just dry out the fresh out over a day
Vixapixi says
Delighted with this! Substituted cinnamon for cardamom as I'd run out. Don't know how much difference it made but it was fabulous. I mixed it into flour and used it to coat chicken livers - it worked a treat. Son is veggie so did button mushrooms for him and served both with crusty bread. So quick, easy and tasty. This is set to be a 'go-to' weekday dish. Going to try with courgettes and halloumi next...
Nigel Gibson says
That is WAY too much cardamom - totally overpowers everything else
Claire | Sprinkles and Sprouts says
Hi Nigel,
Did you make the spice mix? I am wondering if you used tablespoons for the cardamon instead of teaspoons?
The cardamon is 2 teaspoons in a mix that contains 45 teaspoons of spices, we don't find it overpowers it at all.
But that is the beauty of homemade spice blends, you can change it to suit your tastes. 🙂

Zaib says
Is it green cardamom or black cardamom .bcoz there are two different cardamoms in spices.but I believe you mean green not black.plz confirm thanks
Claire McEwen says
Yes green cardamon
🙂
Adrienne says
This is a great spice blend! It is sooooo good! Highly recommend.
Cheryl says
Hi there can I leave out the sugar I can’t have sugar thanks
Claire McEwen says
Hi Cheryl,
You can definitely leave out the sugar. It won't taste quite the same as Nando's but it will still be delicious 🙂
Hope that helps

Sandra says
Can't wait to make this. Having experienced Nando's wonderful chicken while in South Africa, I miss that scrumptious flavor. We can now buy a bottled Peri Peri sauce in some stores here, but I prefer to do it myself...and avoid the questionable additives. Thank you so much for sharing this recipe.
Moddather says
This recipe can be used with fried chicken after frying?
Claire McEwen says
Hi there,
You could definitely use it as a seasoning after you have cooked the chicken, like a seasoning salt.
Or mix it with some oil and use it before you cook the chicken.
Both will work.
Hope that helps

Thanks for sharing this! I've already given your recipe 5* as I know what it's going to taste like before I use it this weekend (I have 17 years catering experience and I'm always experimenting).
I've been using the same 'rub' for 10 years so I think it's time to change and use yours 😉
I have all but one item in my 'spice' cupboard.
Jane says
I love your homemade peri peri seasoning! It's so easy to make and it tastes so much better than the store-bought version.
