This Lemon and Blueberry Punch, is fruity and refreshing, but it packs a punch. (Ha that was unintentional!!!!) It is perfect for relaxing with friends, or for serving at a larger party!

I have had a busy day today, I took the boys to the farmer market, which they love as it has a juice bar and plenty of tasting stations! Mr 6’s favourite is the butcher, and every time we go, he hopes they will have his favourite chicken, a chicken that he still won’t eat at home!!! Go figure! Today they were sampling lamb steaks with himalayan pink salt. He loved it, so we will see if he will eat it at home! He is still in his ‘I don’t like meat’ phase. Which should be more ‘I don’t like meat when it suits me’ I am ignoring as much as possible. I am sure he will grow out of it, I mean he grew out of the ‘I don’t like pasta’ phase!!!

So after the farmer market, we headed to the fisho for a recipe coming later in the week, spend a couple of hours at the park and then headed home, where I made some roasted shrimp stock ready for shooters of soupe de crevette that I am making as party of our canapé party for Melbourne Cup Day. Oh and I also folded more washing that I care to remember! The washing was made easier with the addition of this punch.

I got asked recently whether punch was outdated? I answered a big fat “NO!” If you go on pinterest and look at summer drinks you will find plenty of sangria recipes, and many of them use white wine or champagne. It is quite trendy to make a white sangria. In fact I have one of my own! (Check out my White Sangria recipe here)

Really white sangria is just punch. Punch is an alcoholic (or non-alcoholic) drink with a fruit or fruit juice base. So I say bring back the punch, lets make it this summers drink. It doesn’t have to be served in a bowl with little cups (although that is super retro and super cool!!!) Just make a big pitcher up, fill some glasses with ice and a bit more fruit and serve punch at your next party.

The combinations are endless, in fact I have several recipes to share with you over the next few months. But today I am sharing a combination that works so well together. Bakers have been using it for years, so why not incorporate them together into drink! Blueberry and lemon. Sweet and fruit with a nice edge.

I wanted to add a blueberry liquor but I couldn’t find one in Australia, so I went for a berry vodka and some blueberry juice. A bit of limoncello and all topped off with plenty of sparkling wine. I have tried this with a dry sparkling wine and also a sweet fizzy moscato. Both were good! I think it comes down to personal preference. Do you like a sweeter punch or do you want a drier finish? Or which have you got in the fridge 😉

Ingredients

US Customary - Grams

You can change the measurement from US to metric at the bottom of this list

  • 1 cup ice
  • 1/2 cup limoncello
  • 1/4 cup berry flavoured vodka (I used Absolut Berri Acai vodka)
  • 1 1/2 cups blueberry juice (I used Bickford's Blueberry Juice)
  • 2 lemons (sliced)
  • 1 cup blueberries
  • 1 bottle sparkling wine (Dry or sweet depending on your preference)

Instructions

  • Combine everything except the sparkling wine in a large pitcher.
  • Stir well then pour over the sparkling wine and serve.

    Hi Claire! Lemons and blueberries are meant to be together! I’m thinking a glass or two or this would make any task much easier, especially cleaning the house which is my least favorite task! 🙂

      I completely agree!!! Cleaning is so soul destroying when you have kids!
      You finish a room and before you can turn around they have taken off their sand filled shoes or emptied the lego box over the floor!!!

      Some days a cocktail is the only answer 😉
