There are many things that make life feel satisfying and complete. But top of my list are:

  • Hugs from my children
  • Clean bedding
  • a bowl of pasta
  • and relaxing with Stew and a drink at the end of the week.

On a Friday night, sat on the veranda watching the sunset, gin and tonic in hand and everyone relaxed and happy. That is pretty much the best Friday I can think of! (Well save for a fancy dinner with George! But sadly Mr Clooney has still not come knocking!!!)

BUT! I am a food blogger and sat on the veranda as the sun sets is not the best way to get a photo of my gin and tonic. So because I am so dedicated to Sprinkles and Sprouts and I want to share the gin and tonic love with you guys, I bumped my Friday G&T to Thursday!!!! I know, what can I say, I am just all about the sacrifice 😉

And because recipe development is one of my favourite things, I tried two different alterations to the classic gin and tonic. I couldn’t decide so I left it up to my Facebook page. And this Gin & Tonic Muddled with Blueberry, Lime and Mint won out. For all of those who wanted to see the coriander based G&T. That will be here next week.

Frozen blueberries are best for this – they have a much nicer colour when muddled and also they help to chill your gin down.

The gin/tonic ratios below are based on my personal preference, but add more or less tonic as you like. It is after all your Friday night and your time to relax.

Servings: 2
Calories: 161 kcal
Ingredients
  • 3 tbsp frozen blueberries
  • 2 mint leaves (plus extra for garnish)
  • 1/2 cup gin (125 ml/4oz)
  • 1 cup ice
  • 1 lime
  • 1 1/3 cups tonic water (330 ml/11oz)
Instructions
  1. Place the blueberries and mint into the bottom of a cocktail shaker or large glass.
  2. Use a muddler (or the end of a rolling pin) to give the blueberries a good bash.
  3. Pour over the gin and give it a last muddle.
  4. Add the ice to your glasses, then double strain the blueberry gin mixture to remove any hard blueberry bits.
  5. Top with the tonic and a squeeze of lime.
  6. Garnish with some extra frozen blueberries and a sprig of mint.
