A deliciously refreshing cocktail with the natural sweetness of apple, the wonderful floral hints of elderflower and herbal notes of gin.
GUESS WHAT!!!! I am sat at the airport again! I know right! Two holidays in as many weeks!!!!
Stew and I are off to Cairns for the weekend, and technically this isn't really a holiday. We are there with a mission, but hey we have a hotel room so I am calling it a holiday 😉
So I am sat in Domestic sipping a glass of sparkling wine and watching the world go by. Quite a random mix of people really. Some seem pretty stoked (probably those off on holiday) and some seem miserable. Maybe they are heading off to work? Or maybe they are just finishing a long shift and are heading home - so maybe not miserable more just shattered???

Anyway, I am one of the happy ones, I have champagne, Stew and I am about to get on an aeroplane. I love aeroplanes! Take off is my favourite bit! One day I will share my takeoff story with you, it is a good one and highlights how super amazing my boys are 😉 (Biased??? Me???)
Anyway, I am going to talk to Stew so I will leave you with my Friday cocktail. It is packed with some of my favourite flavours elderflower and apples! Oh and a healthy amount of gin! Just make sure you shake it well over ice before you add the sparkling apple juice. You want this to be nice and chilled and once that sparkling is in there, all chance of a good shake goes out the window.....unless you want the lid of your cocktail shaker to fly off and gin to be wasted! Not a good idea 😉

Elderflower, Apple and Gin Fizz
Ingredients
- 185 ml (¾ cup) gin
- 1½ tablespoon elderflower cordial
- 500 ml (2 cups) sparkling apple juice
- Plenty of ice
- 250 ml (1 cup) champagne
- Apple slices/lemon slices (to serve)
Instructions
- Place the gin and cordial in a cocktail shaker with plenty of ice. Shake well.
- Add the sparkling apple juice and stir gently.
- Pour into flutes, top with champagne and garnish with a slice of apple on the side.

Hehe, I love to fly. We had a fabulous time, two amazing meals out and the sea was so warm!!! So much better than the icy toes I woke up with this morning here in Western Australia x
