Open-face, Hot Turkey Sandwiches are the ultimate leftovers dinner!!! Perfect for those days after Thanksgiving or Christmas when you have lots of leftover turkey and no inclination to cook.

These are delicious and comforting. Plus, you can add any extras that you like. For me that means adding leftover stuffing (that is my favorite bit of a turkey dinner!), but a standard open-faed turkey sandwich is just some good bread, butter, turkey and gravy.
These are perfect for a lunch or late-night snack. Add any leftover veggies to your plate and you have a whole dinner.

Bread: Any bread will work, but I like to use a thick slice of a country loaf. French bread would be great or if you have leftover rolls, then slice one open and use that. Really any bread works, even standard sandwich bread.
Turkey: This is designed to use up leftover turkey. You can use sliced, shredded or chunks of turkey. I like a bit of breast and thigh meat on mine, but all breast works too. If you fancy these when you don't have leftovers, you can buy sliced turkey from the deli.
Gravy: If you are making this during the holidays, there is bound to be some gravy left over. That is perfect, if not, you can make my easy brown gravy. It is seriously delicious.
Additional Ingredients
Stuffing: Add a layer of stuffing to your bread and pop it under the broiler to get warm and crispy. Or heat it in the microwave first and then add it to your bread. Either way it is so good and my goto addition.
Mashed Potato: Warm it in the microwave and add a layer to your bread before you add the turkey.
Vegetables: Warm them with the gravy and spoon them on with the turkey. Or mash them together and use them as a layer under your turkey.
Cheesy Carrot and Rutabaga Casserole: This is one of the best turkey sides!! And it is delicious as a layer on your sandwich.
Onion Casserole: If you have already been introduced to the wonders of my sweet onion casserole, then you know it will make a great addition to any sandwich!

Open Faced Hot Turkey Sandwich
Ingredients
- ½ cup gravy - see note 1
- 6 slices turkey meat - see note 2
- 2 slices bread - see note 3
Instructions
- Pour the gravy into a skillet and heat it until it is bubbling.½ cup gravy
- Reduce the heat to low and add the turkey. Heat gently until the meat is hot.6 slices turkey meat
- Toast the bread. You can do this in the oven, under the broiler, or in an electric toaster or toaster oven. This step is optional, but I like the crunch it gives.2 slices bread
- Add any additional ingredients (see note 4) to the bread.
- Spoon on the turkey and then pour over the gravy.
Notes
- Any leftover gravy is delicious. Or make some especially using my easy recipes. You can use brown or white gravy.
