    Saturday, oh why oh why do you go so quickly? I wake up and before I know it, the sun is starting to set and the day is over.

    When this happens there is nothing else for it but to pour a large glass of wine and get out a plate of nibbles!

    Smoked Salmon Pâté. A delicious and rich pâté, perfect for entertaining.

    Today it is smoked salmon pâté, this is a wonderful rich pate, that makes a small amount of smoked salmon go a long way. You can use the smoked salmon trimmings that supermarkets sell. Or the small slices at the end of a whole side of smoked salmon, you know the ones I mean, they are too small to fill a sandwich and often get eaten as a cooks perk. No? That just me? 😉

    The capers and lemon juice cut through the cheese and salmon mixture, but if you really aren't a fan of capers you can leave them out. I like to serve this with Toast Points or Melba Toast but it is also delish spread onto bagels or chunks of baguette.

    Ingredients
     
     

    • ⅓ cup sour cream
    • ½ cup cream cheese
    • 1-2 teaspoons capers
    • 1 teaspoon lemon juice
    • 1 teaspoon prepared horseradish
    • 5 oz smoked salmon

    Instructions
     

    Prevent your screen from going dark
    • Put the sour cream, cream cheese, capers, lemon juice and horseradish into a food processor.
    • Add half of the smoked salmon and blitz until smooth.
    • Chop the remaining smoked salmon into small pieces.
    • Tip the pâté into a bowl and stir through the chopped smoked salmon.
    • Serve with toast points or melba toast

      Is this thick enough to use a tiny ice cream scoop to make little balls? For an upcoming Afternoon Tea I'm having I want to make some smoked salmon verrines. tiny glasses maybe with some type of avocado mousse in bottom, a layer of creme fraiche and maybe two small scoops (nickle size)on top of that with a couple capers/onion etc. and serve with very thin crostinis. Do you think I can use the scoops on this recipe.

        Hi Sherry, that sounds like a delicious hors d'oeuvre!
        Make sure you use block cream cheese rather than a spreadable one and it should set up again in the refrigerator. The sour cream means it isn't completely solid, but I would say it is hard enough to ball with two spoons (or a melon baller/mini ice cream scoop)

      The instructions say to add horseradish, which isn’t in the list of ingredients. How much horseradish?

        Hi Sye,

        Not sure why that isn't showing in the ingredients! I've been in and clicked update to see if that fixes it.
        You will need 1 teaspoon of prepared horseradish.

      Hi Claire! Made this AGAIN today and have to hide it in the fridge or Gary will eat it all! I love capers but find so few recipes that use them. Thank you for sharing this wonderful pate!

        I love capers, I will make sure to share a few more recipes with them. We caper loves have to stick together.

        p.s my chicken with tomato and olive dressing pays homage to my love of capers. The photo isn't great as it was back when I was using my phone to take photos. But the recipe is yum! (P.s I make it with thighs a lot of the time!)
