    This Creamy Tomato Salmon Gnocchi is a quick and delicious dish perfect for a chilly evening.

    Succulent Salmon, in a creamy tomato based sauce with garlic, Italian seasoning, and spinach! This is the best kind of comfort food. Plus, everything is cooked together in the same pan, meaning this Creamy Tomato Salmon Gnocchi is so easy to make and quick to clean up. 

    The perfect midweek dinner for the whole family! This creamy tomato sauce takes store-bought pre-packed gnocchi and turns it into something fabulous!

    What is Gnocchi?

    Gnocchi are a small dumpling that's made with a combination of mashed potatoes, flour, and often eggs or cheese. 

    They are pillowy soft, tender 'clouds' that have a slight chew to them.

    They are super simple to cook! You cook them like you would pasta, that is to say in a pan of boiling well-salted water. 

    Gnocchi cooks very quickly, and you will know when they are done as they float to the top of the pan. 

    While homemade gnocchi is fantastic, for a stressfree midweek meal, I like to use shelf-stable pre-packaged gnocchi. You can find it in the pasta aisle at the grocery store. DeLallo is my favorite brand, but to be honest, they are all great!

    Making Creamy Tomato Salmon Gnocchi

    The beauty of this Creamy Tomato Salmon Gnocchi is it all cooks in one pan! 

    You cook the salmon first and then use the pan for cooking the onion and garlic. Once these have softened, you add canned tomatoes, your seasonings. Simmer this for 10 minutes, then add some heavy cream, and then finally the gnocchi. 

    Everything is simmered together, and then at the last moment, fresh spinach and the flakes of cooked salmon are added! So easy and quick!

    What to serve with One Pot Creamy Tomato Salmon Gnocchi

    We like to serve this salmon gnocchi with a simple salad and some crusty bread.

    Crusty bread is a must for mopping up all that delicious sauce! And the light salad makes the perfect healthy side dish.

    What Wine to serve:

    Salmon is a beautiful fish to pair wines with, working well with white, rosé, or red wines! But the tomatoes add an interesting twist to the dish! 

    For those who love white wine, a good solid pairing would be something dry and crisp like a Pinot Gris or Sauvignon Blanc, although a richer Viognier would be a fun pairing! 

    For red lovers, steer clear of high tannin wines and instead go for light-bodied reds like pinot, gamay, or grenache.

    My fav though is to pair this Creamy Tomato Salmon Gnocchi with a rosé. An excellent fruity rosé like a Grenache rosé is the perfect balance for the savory salmon and the hint of sweetness from the tomatoes.

    This Creamy Tomato Salmon Gnocchi is a quick and delicious dish perfect for a chilly evening.     Ingredients
     
     

    • 2 tablespoon olive oil divided
    • 2 salmon fillets - see note 1
    • 1 onion - see note 2
    • 4 garlic cloves
    • ¼ cup white wine - see note 3
    • 1 can diced/pureed tomatoes (14.5oz/400g can)
    • 1 teaspoon Italian seasoning
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • 2 tablespoon capers
    • 1 ¼ cup heavy cream
    • 1 lb uncooked potato gnocchi - see note 4
    • 1 cup fresh spinach

    Instructions
     

    Prevent your screen from going dark
    • Heat 1 tablespoon of olive oil, in a skillet or high-sided frying pan, over medium-high heat.
    • Sear the salmon for 4 minutes on each side (or until cooked to your liking), then transfer to a plate and tent with foil.
    • While the salmon is cooking peel and finely chop one onion and 4 garlic cloves.
    • Add the remaining 1 tablespoon of olive oil to the skillet and saute the onion for 4-5 minutes until soft.
    • Add the chopped garlic and cook for 30 seconds until fragrant.
    • Add the white wine and let the mixture simmer for 1 minute.
    • Add in the can of diced/pureed tomatoes, 1 teaspoon of Italian seasoning, ½ teaspoon of salt, ¼ teaspoon black pepper and 2 tablespoon of drained capers.
    • Cook this for 5 minutes, uncovered over medium-high heat until thickened slightly. Stir regularly, so it doesn't catch on the bottom.
    • Add the gnocchi and heavy cream, bring back to a simmer and cook over medium-low heat for 5 minutes.
    • Remove from the heat and add in the fresh spinach.
    • Flake over the cooked salmon and serve.

    Notes

    1. Buy skinless salmon fillets to make this dish easier. Pick nice meaty thick fillets. For four people, 10oz/280g will be plenty.
    2. Any onion will be fine. I use standard brown onions.
    3. Any dry white wine, or swap for vegetable broth or fish stock.
    4. You can find shelf-stable pre-packaged gnocchi in the pasta aisle at the grocery store. DeLallo is my favorite brand.

      I cannot believe how easy and quick it was. And I loved how my hubby was licking the plates after this, hehe. I served with Rosé like you suggested and I don't think there's a better combination. It made to my quick dinners list!

      This was delicious and filling, and quick enough for a weeknight dinner. I used 8 oz of leftover prepared Costco salmon filet, and plain Walmart (Great Value) gnocchi. I love the idea of not having to cook the gnocchi separately! This recipe is definitely a keeper!

      I made this dish with half and half instead of full whipping cream, and I used pinot noir red wine instead of white wine. I also put salmon on the side because there's lots of leftovers. It turned out great, and I would totally make again! My question is, can I freeze leftovers, or not advised due to dairy? Thank you for this recipe, and I look forward to your response!

        I find that gnocchi doesn't freeze well, it gets an odd texture.

      I left out the capers and tinned tomatoes and used sundried tomatoes instead and it was still absolutely delicious. Will definitely make again .

      I absolutely loved the gnocchi in the sauce but I thought the salmon would be better on the side. I ended up picking out the salmon & eating it separately. I'm trying it with shrimp tonight & I'm so excited to eat the gnocchi again!

      Gorgeous tasted, my hubby didn't like texture of asda own gnocchi so might try your favourite brand next time. I loved it tho, thank you. I also used single cream but is there a less fattening way?

        Package gnocchi vary so much don't they! I hope you find a brand your hubby loves.
        I haven't tried the recipe with any of the low fat cream options, but they may work. But I love the rich creamy taste so I just take the calorie hit 😉

      Hi, only reason this isn't five stars is because this is going to make me fat!! Recipe was deemed a "keeper" tonight. We used hot smoked salmon - bit more expensive but so tasty!

        Hi Olivia,

        I cook the salmon as a fillet (as I find it easier to monitor) then flake it up (or cut it up) before adding it into the dish right at the end of cooking (step 11) this way it stays juicy and in nice bite size chunks. Adding it before that I have found that it starts to disintegrate a little.
