of granary bread

avocado
1
teaspoon
lime juice
pinch of salt
2
eggs
4
slices
of smoked salmon
black pepper
Instructions

Prevent your screen from going dark
Put the the bread in the toaster.
Cut the avocado in half and remove the flesh into bowl. Use a folk to mash it up.
Mix together the lime juice and salt then add to the avocado.
Spread the avocado onto the toast.
Put a small pan of water onto boil.
Once it comes to a boil turn the water down to a low simmer.
Crack your first egg into a saucer.
Give the water a gently stir and slide the egg into the water.
Repeat with the second egg.
Cook the eggs for 3 minutes. Make sure you time them, 3 minutes goes really quickly.
Remove with a slotted spoon and drain on a tea-towel
Place two slices of salmon on each slice of toast and top with an egg.
