    Chicken Wings with Lemon and Oregano

    Let us just take a moment to gaze at these delectably juicy and tasty chicken wings. Slightly glazed with sticky lemon and aromatic oregano and black pepper they are a wonderful sight. I wish you had a scratch and sniff computer screen as the smell of lemon, black pepper and roast chicken is amazing.

    I used to have a bit of a love hate relationship with chicken wings. I loved the flavour and moist tender meat, but they are small and fiddly so I'd get frustrated eating them, they take time to eat and you do get a bit messy! I have made my peace with them, nowadays I don't mind picking them up with my fingers and getting messy.

    I am putting this food 'evolvement' down to Mr 7 and Mr 4. Being a Mum of boys means you quickly learn to make peace with mess, dirt and sticky fingers. Well certainly being a Mum to my two boys! Don't get me started on the sticky marks that are all over my patio doors!

    These wings don't make your windows dirty but they do make your fingers a little sticky so have finger bowls and/or a pile of napkins at the ready.

    If you are not a fan of chicken wings, then this recipe works well with drumsticks and thighs. Thighs roasted in this way with a huge pile of Paris mash is a winning meal. Or serve up the thighs with doorsteps of fresh bread and a salad.

    Once I have juiced the lemons I cut the skin and remaining flesh into small chunks and roast them along with the chicken. The smell is fantastic and you get sour gummy pieces of lemon to nibble on. They are like a super sour sherbet lemon. Some people love them and some people hate them! Either way add them to the roasting tin as they will add to the wonderful lemon scent that fills the house.

    There is quite a lot of black pepper on these wings, I love it like this, it adds a wonderful aromatic background heat to the chicken, but I always leave a few wings pepperless, or at least lightly peppered as Mr 7 and Mr 4 are only just developing a taste for peppery heat. (here read: if they see pepper they think food is spicy!) If you are sensitive to pepper or like a mild dinner than just grind over a small amount of pepper, the result won't be quite as aromatic but I can tell you they will still be demolished.

    Servings 4 -6

    Ingredients
      

    • 12 large chicken wings
    • 2 lemons
    • 2 tablespoon olive oil
    • 1 teaspoon dried oregano
    • 1 tablespoon cracked black peppercorns (see notes)
    • 1 teaspoon salt

    Instructions
     

    • Pre-heat the oven to 220ºC/200ºC fan forced/Gas mark 7.
    • Arrange the wings in a single layer in a roasting tray lined with cooking paper.
    • Cut the lemons in half and squeeze them evenly over the wings, then cut each half in half again and nestle them in-between the wings.
    • Pour over the olive oil then sprinkle over the oregano, cracked black pepper and salt.
    • Place the wings in the oven and roast for an hour until golden.
    • Serve immediately with the gummy sticky lemon pieces.

    Notes
