    Sesame Chicken Toast

    This Sesame Chicken Toast recipe is inspired by the classic Chinese appetizer shrimp toast (prawn toast). But it uses ground chicken instead of seafood, and let me tell you, they are amazing! 

    The second best part about this recipe (obviously, taste is the first) is that it's surprisingly easy to make. You'll need just a few simple ingredients, and it only takes about 30 minutes from start to finish.

    Chicken Toast is a restaurant-quality, crispy, and flavorful appetizer that will impress your friends and family. 

    Ingredient Notes

    These notes are here to help make this recipe a success; they cover some but not all ingredients. For a complete ingredient list, check out the recipe card below.

    Ground chicken: Also called chicken mince, you can buy it in most grocery stores these days. 
    White pepper: This imparts a different flavor to black pepper, and it is worth having in your pantry if you make a lot of takeout-inspired recipes. You can replace it with black pepper if you don't have any white.
    Chinese rice wine: This is also known as Chinese Rice Wine, Shaohsing Rice Cooking Wine, Shaoxing Wine, or Shaoxing Cooking Wine. You can find this in most grocery stores in the Asian section. Just don't get it confused with rice wine vinegar!!! Leave it out, or use dry sherry if you can't find Chinese Cooking Wine.
    Cornstarch: Also known as cornflour.
    Green onions: Also known as spring onions or scallions.
    White bread: Just regular white sandwich bread is perfect here. Brown or wholemeal and slices of artisan bread or sourdough don't work.

    Recipe Tips

    We've tested this recipe at least 3 times to ensure it works well for you. Have a look at our tips for getting the best dish you can!

    • Using a food processor is the quickest and easiest way to combine the ingredients. But you can also use a wooden spoon to beat the ingredients together.
    • The ingredients are added to the food processor in stages to ensure that everything combines perfectly. 
    • The green onions aren't added to the food processor as if they get whizzed up; they give the chicken mixture a strange green tinge, which isn't appealing.
    • When cutting the toasts into triangles, wipe the knife after each cut. You'll find you get in less of a mess this way. 
    • Coating the toast in the sesame seeds is best done by dipping them into a shallow bowl of seeds. Sprinkling just makes a mess! 
    • You can use a deep-fat fryer or heat oil in a saucepan on the hob. You want your oil to be at 355ºF/180ºC.
    • Cook the sesame chicken toast, topping side down first. This seals the top, making them less likely to fall apart while cooking.

    Recipe Adaptions

    These are all just suggestions and things that have worked in our test kitchen, but it is your dinner, so adapt it to suit your family. That is the beauty of cooking; we can all create our own delicious meals.

    • You can use ground turkey or pork in place of the chicken. 
    • Add an extra herbal note with some chopped cilantro/coriander stems.
    • Add some spice with a ¼ teaspoon of red pepper flakes.
    • Use black and white sesame seeds for a fun look.

    Ingredients
     
     

    • 9 oz ground chicken
    • 1 clove garlic finely grated
    • ½ teaspoon ginger finely grated
    • ½ teaspoon salt
    • ¼ teaspoon sugar
    • ¼ teaspoon white pepper
    • 1 egg white
    • ½ teaspoon sesame oil
    • ½ teaspoon Chinese rice wine
    • 1 teaspoon cornstarch
    • 1 tablespoon green onions finely sliced
    • 4 slices white bread
    • 6 tablespoon sesame seeds
    • 3 cups canola oil or a deep-fat fryer

    To serve

    • green onion
    • chili sauce

    Instructions
     

    Prevent your screen from going dark

    Making the paste (food processor)

    • Place the ground chicken, finely grated garlic, finely grated ginger, salt, sugar, and white pepper into a food processor and whiz for 15 seconds until combined.
      9 oz ground chicken
      1 clove garlic
      ½ teaspoon ginger
      ½ teaspoon salt
      ¼ teaspoon sugar
      ¼ teaspoon white pepper



    • Add the egg white, sesame oil, and Chinese rice wine. Whiz for 30 seconds.

    • Add the cornstarch and whiz for 15 seconds.
      1 teaspoon cornstarch



    • Remove the blade and stir in the finely chopped green onions.
      1 tablespoon green onions



    Making the paste (wooden spoon)

    • Place the ground chicken, finely grated garlic, finely grated ginger, salt, sugar, and white pepper into a bowl and use a wooden spoon to beat the mixture for 30 seconds until combined.
      9 oz ground chicken
      1 clove garlic
      ½ teaspoon ginger
      ½ teaspoon salt
      ¼ teaspoon sugar
      ¼ teaspoon white pepper



    • Add the egg white, sesame oil, and Chinese rice wine and continue to beat with a wooden spoon for a minute until the mixture is lighter and well combined.
      1 egg white
      ½ teaspoon sesame oil
      ½ teaspoon Chinese rice wine



    • Add the cornstarch and green onions to the mix and stir for 15 seconds.
      1 teaspoon cornstarch
      1 tablespoon green onions



    Assembling the toasts

    • Remove the crusts from the bread.
      4 slices white bread



    • Spread the chicken mixture on the bread, trying for complete coverage and a smooth top.
    • Cut the bread diagonally into 4 triangles. Wipe the knife after each cut.
    • Tip the sesame seeds into a shallow bowl and press each triangle into the seeds until you have a good coating.
      6 tablespoon sesame seeds



    To cook

    • Heat the oil in a medium saucepan over medium-high heat until it reaches 355ºF/180ºC. Or set your deep-fat fryer to the same temperature.
      3 cups canola oil or a deep-fat fryer



    • Cook the toasts in batches, sesame side down, for 3 minutes, then flip and cook on the other side for 1 minute.
    • Drain on kitchen paper.
    • Serve sprinkled with thinly sliced green onions and a chili dipping sauce.
