    2 Minute Frozen Yoghurt

    Frozen Yoghurt in 2 minutes!!! Oh yes, now you can have froyo (or as I always think it should be called forgurt!!!) at home whenever you feel like it. And in any flavour combo you can think of! What do you say? fro-yo or do you think my fro-gurt will catch on? 😉

    How is the weather where you are? The kids went back to school this week and sure enough the weather has been glorious! We had rain and hail all school hols and now they are back we have 4 days of sunshine! Typical! After two wonderfully warm days I decided they needed a cool treat so I whipped up some frozen yoghurt. AND I realised that I have never shared my frozen yoghurt with you!!! And quite frankly that is rude! Because, well it takes 2 minutes to make! And it delicious!

    Yup, this is a super simple recipe. I have an amazing ice cream maker, I love it! In an hour you can have delicious creamy ice cream, but sometimes an hour is just too long!!!! So frozen yoghurt in 2 minutes!?!?! Winning! And claiming a prize for best mum 😉 (Shush don't tell them it is pretty healthy!)

    I like to add a small amount of herbs into the yoghurt, I love the freshness, but just leave them out if you aren't keen on the idea. Just as a word of caution, a small amount of herbs goes a very long way. I am talking a leaf or two. Don't add a big sprig, the flavour is meant to be subtle rather than a full on herbaceous riot! Unless you fancy a herbaceous riot, then knock yourself out! In fact I have just had the best idea!!!! Savoury frozen yoghurt to serve along side an appetiser....Ooooh I am a genius 😉 Watch this space!

    But for now back to kid pleasing sweet frozen yoghurt. The method is so simple and works with any frozen fruit, I have given my favourite combos below but mix it up, give it a go and find your favourite combination.     Servings 2 cups

    Ingredients
      

    • 225 g /8oz frozen fruit
    • 225 g /8oz 0% fat Greek yoghurt
    • 1 tablespoon maple syrup/honey/rice malt syrup/agave syrup (or your favourite liquid sweetener)
    • 2 -3 single herb leaves (optional)

    Instructions
     

    • Add the fruit, yoghurt, sweetener and herbs (if using) to the food processor and blend for a minute.
    • Scoop out and serve immediately.
    • Or place in a freezable container and freeze until needed.

      Hi Claire! WOW! What a great after school snack in TWO minutes and it's good for the boys! You've got my vote for Best Mum!! 🙂 I always have frozen fruits on hand, they come in so handy for so many things!
