This Moroccan Tomato Salad is one of my go-to salads when juicy, ripe tomatoes are at their best. Combining fresh tomatoes, cucumber, capsicum, onions, herbs, and tangy lemon juice creates a perfect balance of sweet and sour. It is refreshing, light, and totally delicious! It is also incredibly versatile. You can serve it as a side dish with grilled meat or fish, add it to wraps or flatbreads, and it is an excellent addition to any summer potluck or BBQ.

Ingredients
½white onionfinely chopped
½lemon
½teaspoonsalt
¼teaspoonblack pepper
3tomatoesfinely chopped
½cucumberfinely chopped
½red bell pepperfinely chopped
2tablespoonextra virgin olive oil
1tablespoonfresh parsleyfinely chopped
1tablespoonfresh chivesfinely chopped
Instructions
Add the chopped onion to a non-metallic bowl, squeeze over the juice of half a lemon, season with salt and pepper, and stir well.½ white onion½ lemon½ tsp salt¼ tsp black pepper
Let the onion sit for 5 minutes (I use this time to do the rest of my chopping), then add the remaining ingredients.3 tomatoes½ cucumber½ red bell pepper2 tbsp extra virgin olive oil1 tbsp fresh parsley1 tbsp fresh chives
Stir well to combine and taste the salad. Add more salt, pepper, and lemon juice to taste.
