    White Choc Chip Fudgy Brownies

    Shush, don't tell my birthday brownies, but I am seriously crushing on these white choc chip fudgy brownies at the moment. They are packed with white choc chips, they are slightly chewy, slightly gooey, massively fudgy and totally amazing!!!

    Yup I have a big old crush on these!!! They aren't better than my old faithfuls, they are just different. Sort of like your new boots, compared to last years worn in pair. You wouldn't want to pick so you are just grateful that you have both in the wardrobe.

    Did that analogy work??? I can't decide so I am leaving it in. Hopefully you get the picture. When it comes to brownies more is always best 😉

    I am also crushing on these pictures!!! It was late on Saturday afternoon, the evening sun was flooding through the windows and I was happily snapping away. I love it when you have a vision in your head and it appears on the camera screen! It isn't always the case!! Usually I have someone snapping at the gate, ready to eat the food. Luckily I handed out several brownie squares before I picked up the camera so I was left alone for 15 minutes.

    Just look at the falling sugar....don't you want to grab that brownie??? It is what I did as soon as the shoot was over. Grabbed a brownie, grabbed a coffee and sat down to enjoy.

    Which is better than Sunday, when there was no coffee first thing as we woke up to find we were out of water!!! We collect rain water, which is wonderful over winter, but come summer you need to have a big old supply to get you through, or have it carted in. But no one carts in water on a Sunday, so I had to wait until Monday to ring up, meaning an early Tuesday delivery. So we started this week with 48 hours of no water!!!

    I went to the gym to shower, as did Stew. But I had to take the boys, with towels and pjs to a friends so I could shower them at her house. Two young boys cannot go 3 days without washing!! They are filthy after just half an hour!!

    Having no water is a major pain in the backside!!!! I don't mind not having to fill and empty the washing machine, but washing school uniforms by hand with bottled water is SOOOO WRONG on so many levels!!!!

    The water is back now!! And we are hoping that this hot Autumn will end soon so we can start collecting again! But until we do there is always chocolate brownies!!! And licking the bowl is like washing it up. Right?

    White Choc Chip Fudgy Brownies

    Ingredients
      

    • 120 g /4oz salted butter
    • 200 g /7oz dark chocolate melts or choc chips
    • 165 g /6oz plain flour
    • 30 g /1oz unsweetened cocoa powder
    • ½ teaspoon baking powder
    • ½ teaspoon salt
    • 120 g /4oz white chocolate chips
    • 280 g /10oz granulated sugar
    • 3 eggs

    Instructions
     

    Prevent your screen from going dark
    • Pre-heat oven to 175ºC/Gas Mark 5/350ºF.
    • Line a 20x12x5 (cm) baking tin with cooking paper.
    • Cut the butter into pieces and place into a glass/metal bowl. (you can use plastic if you are sure it can take heat)
    • Add the dark chocolate chocolate melts to the bowl and place it over a pan of boiling water. Make sure the bowl isn't touching the water and be careful not to get any water into your chocolate mix.
    • Melt the chocolate and butter together, stirring occasionally, until smooth.
    • Whilst the chocolate is melting measure out the flour, cocoa powder, baking powder and salt. Stir gently to combine and break up any lumps of cocoa.
    • Add about 100g of the white choc chips to the flour mix and stir to combine.
    • Once the dark chocolate has melted, add the sugar to the chocolate in two equal(ish) batches. Stir between the additions.
    • Once the sugar has been combined stir in the remaining 20g of white chocolate chips.
    • Crack the eggs into the chocolate, one at a time, stirring after each egg.
    • Pour the chocolate mixture into the dry ingredients and fold together until just combined.
    • Pour the batter into your prepared tin.
    • Bake for 40-45 minutes. The inside should still be gooey, down try the skewer test, the point of a brownie isn't a clean skewer.
    • Allow to brownie to cool for 15 mins in the pan.
    • Cut into squares and sprinkle with icing sugar to serve.

        I haven't tried them gluten free. I know bad daughter 😉

        I would try using a GF plain flour and using less. Try 130g rather than the 165g in the recipe.

        Hope that helps, I will get to work on a GF brownie before next Jan x

      Definitely craving a brownie right now after seeing these. Love the idea of adding white chocolate chips too - that's something I've never tried out in my brownies.

        Brownie cravings are the best!!!
        White choc chips are great in these. Peanut butter chips work well too, but not so great if the kids want to take them to school.

          Thankfully we have a camper so don't have to sleep on the floor....but....it is nice to have treats on holiday!!!!! I might even try them for school for amber's bday instead of cupcakes as i am not too flash hot at cup cakes!!!!

        So glad I am not the only one who decided to eat in the middle of the night!
        I often end up with a steamer basket of dumplings 😉
        But brownies are a better choice!!!
