    Curried Sausages

    Curried Sausages is an Australian and British classic and an easy, delicious, and affordable meal for the whole family. 

    Curried Sausage is as retro as it gets!! It is the food that so many of us remember from our childhood; it disappeared and became a bit "uncool," but I am bringing it back because it's tasty, quick, and easy to make, cooks in one pan, and the kids love it!

    It takes under 30 minutes and is a great one-pot meal. Serve it with rice, mashed potatoes, or fries!

    Ingredient Notes

    These notes are here to help make this recipe a success; they cover some but not all ingredients; for a complete ingredient list, check out the recipe card below.

    • Sausages:  Any sausage link works for this recipe. You can pick beef, pork, chicken, or turkey sausages. You could even use a vegetarian sausage! Buy a good quality sausage as they taste much better and keep their shape better. For those in the US - You want to use sausage links or the pre-cooked sausages from the chiller section.
    • Onions: Use any onions you like for this recipe; brown, white, or red onions will work well.
    • Veggies: -I like using carrots, frozen peas, and corn. But you can add any veg that you want. 
    • Curry powder: You can use any curry powder blend that you have available. Each brand will have a slightly different flavor and taste. So pick one that you like.
    • Broth: This adds flavor to the curry gravy. You can use beef, chicken, or vegetable broth.
    • All Purpose (Plain) flour: This is added to thicken the curry gravy. To make the dish gluten-free, you can thicken it with cornstarch, but this affects the ability to freeze the finished dish.

    Recipe Tips

    We've tested this recipe at least 3 times to ensure it works well for you, have a look at our tips for getting the best dish you can!

    • If you have leftover sausages from a BBQ, then you can use these and skip the sausage cooking step!
    • Add coconut milk or a splash of heavy cream if you like a creamy curry.
    • Add a pinch of red pepper flakes or cayenne pepper to make the curry spicier.
    • When adding the broth, add a small amount and then stir well. The mixture will clump together like wet sand. But keep slowly stirring in your broth, and your mix will come together beautifully smooth.
    • If you like a sweetness to your curry, add some chunks of apple or some sultanas.

    Making ahead of time

    Allow the curried sausages to cool, place them in a lidded container, and store them in the refrigerator for four to five days. You can also freeze your curry for up to three months. Leftovers can be stored in the same way.
    You can reheat it in a pan or microwave when ready to eat.

    Ingredients
     
     

    • 1 tablespoon oil
    • 1.2 lb sausages (note 1)
    • 1 onion
    • 1 tablespoon curry powder (note 2)
    • 3 tablespoon flour
    • 2 ¼ cups broth (note 3)
    • 1 carrot peeled and sliced
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • ⅔ cup peas frozen is fine
    • ⅔ cup corn frozen is fine

    Instructions
     

    Prevent your screen from going dark
    • Heat the oil in a large skillet or low casserole.
      1 tablespoon oil



    • Cook sausages over medium heat until they are browned and cooked through. This will take around 6-8 minutes, depending on the thickness of your sausages.
      1.2 lb sausages



    • Remove the sausages from the skillet and slice them into thick chunks. Cover with foil to keep warm.
    • In the same skillet, add the onion and cook for 2-3 minutes until translucent and starting to color on the edges.
      1 onion



    • Add curry powder and flour and stir well into the onions.
      1 tablespoon curry powder
      3 tablespoon flour



    • Gradually add the broth; the mixture will initially clump together like wet sand, but keep slowly stirring in your broth, and your curry gravy will come together smoothly.
      2 ¼ cups broth



    • Add the carrots, salt, and pepper and stir.
      1 carrot
      ½ teaspoon salt
      ½ teaspoon black pepper



    • Bring to a simmer and cook for 5 minutes.
    • Add the sliced sausages, peas, and corn, and bring back to a simmer. Cook for 2 minutes.
      ⅔ cup peas
      ⅔ cup corn



    • Serve immediately or allow to cool and store for later.

    Notes

    1. This weight is around 8 sausages. You can use any sausage for this recipe- beef, pork, chicken, or turkey sausages. You could even use a vegetarian sausage!       I love creamy curried sausages. You said you can use coconut milk or heavy cream. Does this replace the broth or as well as?

        Add the cream/coconut milk as well as the broth. I usually add about 1/4 cup.

      Don't know if I'd ever made this retro recipe before but my husband asked for it. He loved it. I'm now a vegetarian so I made up the recipe for the sauce then added my own protein to my serving and threw in the cooked sausages to the rest. So easy. Will be adding this to my rotation.       What a wonderful meal! Just wanted to tell you that we are "Bluey" fans in this house and we hadn't heard of Curried Sausages before watching an episode of Bluey that had Grandad ordering Curried Sausages. To me it sounded very interesting, so I looked up recipes for Curried Sausages and yours was the one that caught my eye because you advertised it as kid friendly❤ So I looked at it and decided to give it a try. My grandchildren that live here with me just loved it! My husband, daughter and son in law all went back for seconds! I am very pleased with the results, thank you! It will become a regular meal in our rotation😋❤

        If you love sausages like this, you might like my devilled sausages too. It is has a flavourful spice to it, but no real heat. My kids love the fruitiness of it 🙂

      Love this recipe and yes the type of sausages matter! The US have crap sausages so I often order Irish bangers from speciality grocers. Use uncooked bratwurst sausage in the US! NEVER use those cooked sausages - they are nasty!!! I also add a tablespoon of Rosellas fruit Chutney. I have also been using couscous as the starch!

      You mentioned sugar in the instructions, but it is not in the ingredients list.

        Hi Steve,
        Thanks for the spot. Sometimes what is in my head isn't what I write on the screen. There is no sugar in the curry. But if you like sweetness then a chopped up apple works well.
