    This Easy White Bean Mash is a great speedy vegan side dish. Full of protein and fibre and you don't have to worry about peeling potatoes. | Simple, delicious and healthy.

    How to make bean mash

    Bean mash is so quick and simple.

    You heat the beans with some stock, and then mash to create a wonderfully rustic and easy mash.

    How to mash beans without a masher

    If you don't have a potato masher don't worry, this bean mash is made by using a fork/spoon.

    What to serve with bean mash?

    The great thing about this easy bean mash is you can serve it with some many different dishes. It is great with

    • Sausages and gravy
    • With Onion Smothered Pork Chops
    • With Steak Mignon
    • With Creamy salmon piccata
    • With a big pile of roasted mushrooms (vegetarian option)
    • Or with chickpea stew (great vegan option)

    Easy White Bean Mash with Lemon and Thyme

    This Easy White Bean Mash is a great speedy vegan side dish. Full of protein and fibre and you don't have to worry about peeling potatoes. | Simple, delicious and healthy.

    Ingredients
     
     

    • 2 cans white beans (14oz/400g cans)
    • 1 tablespoon olive oil
    • 2 sprig fresh thyme
    • 1 lemon
    • ½ cup vegetable stock
    • salt to taste
    • pepper to taste
    • EVOO (see notes)

    Instructions
     

    Prevent your screen from going dark
    • Drain the beans and rinse under a tap.
    • Add the olive oil to a small pan, pull the leaves from the thyme sprigs and add them to the oil.
    • Place over a low heat and gently warm the oil.
    • Once the thyme starts to smell aromatic, add in the drained beans, the zest of the lemon and the vegetable stock.
    • Stir over a medium/low heat until the beans are warmed through.
    • Use your wooden spoon (or a large fork) to squash the beans into the stock until you have a rustic mash.
    • Check your seasoning and serve drizzled with EVOO.

    Notes

    Here the EVOO makes so much difference to this dish, don't miss it out and use the best you can 😀

    Oooh, nothing to say....maybe I am in a lazy mood because I avoided peeling potatoes for dinner 😉

    Actually I am just shattered and am looking forward to curling up in bed with a cup of tea and my book. YES I am middle aged!!!!

      The ingredient instruction is ambiguous. You really need to make it clear that you either use two 400g tins of beans or two 200g tins of beans for a total of 400g. Precise and clear communication is absolutely required with recipes.

        Hi Kevin,
        The recipe states 2 cans white beans (14oz/400g cans) So you will need two 400g cans.
        I hope that clears up your confusion.
        I agree that "Precise and clear communication is absolutely required with recipes" and as my full time job I work very hard to make sure my recipes are clear.
        Apologies that when reading the recipe it didn't appear clear to you.

      Okay, you blew my mind with the idea of just mashing up beans instead of peeling potatoes, which is like one of my least favorite kitchen duties ever! These sound so good! And I love beans in all forms, but especially with the lemon and thyme that you used! Yum!

      After a busy day having a mash in under 10 minutes sounds perfect.

      What an amazing idea, Claire. I bet this tastes very similar to real mash, but it's full of protein. Great for vegans and non vegans alike. I've tried cauliflower mash, now i need to try this too!
