    Seared Tuna with Roasted Rosemary Tomatoes

    I have hurt my toe, I think it is broken, hmmmm well maybe just bruised but broken sounds more dramatic. It is bruised and sore and hurts and I am sad and I had to sit down for a whole hour!! I am a little embarrassed to tell you about it, mainly due to the events that lead up to the breaking bruising of said toe.

    By the way you might have noticed it is Tuesday, which means I am kid free and have time to sit for an hour nursing my broken toe....come on it might be broken! You never know!!!

    I was attacked by lamb, it jumped deliberately at me and broke my toe! Well no it didn't jump, it fell and it didn't break it, it bruised it (maybe broken)

    I had started this morning being productive. I started on my Tuesday To Do List. Number 1 on the list, clean shower...check. Number 2 on the list, wipe down the extractor fan and soak the filters....check. Number 3 sort out the freezer and log the contents. When I say log the contents I mean, make a new mental note of what is in there as I have lost the old one somewhere in the corner of my brain! Think I filed it somewhere with the note that said remember to vacuum under the sofa, which is probably next to clear out the bathroom cabinet.

    So productive day off to a flying start. I am 4 cups of coffee in, I was flying until the lamb. It didn't start with the lamb, it started with 2 ziplock bags and some frozen cherries. The cherries fell out, and as I shoved them back in I dislodged the ziplock bags that are unlabelled and may contain egg whites but it is hard to tell. *Note to self LABEL ALL BAGS. Anyway as I opened a freezer drawer to hide put away the egg whites I caused a freezer avalanche ending in a shoulder of lamb falling on my toe. Ouch.

    So there in ended my productive day. I decided the freezer had had enough attention, put my broken foot up on the sofa, pulled out the laptop and had a lovely hour catching up on Pinterest and my favourite blogs.

    I then realised that it was lunchtime so I hobbled to the kitchen counter to find I had left a frozen defrosted vacuum packed tuna steak out of the freezer AND 2 pieces of cod. Guess what I had for lunch 😉

    The cod is in the fridge, I'll make fishcakes tomorrow.

    I seared the tuna and had it with roasted tomatoes. Yummy. Disaster averted. Actually disaster converted into a delicious lunch.

    Ideally I would have used roma tomatoes as they are sweeter and hold their shape better when roasted. But I didn't have any in the fridge so I just went with round tomatoes.

    So I cooked my lunch, stacked the dishwasher and my toe still hurt (sort of). So I thought the best thing to do was to rest it some more. So here I am, on the sofa, music playing, laptop whirring, writing an early blog post. Well I can't very well spend the afternoon cleaning with a broken toe, now can I????

    Ingredients
      

    • 1 cloves garlic
    • 1 lime
    • 4 tablespoons olive oil divided
    • 4 tuna steaks (approx 5oz/150g each)
    • 3 tablespoons chopped rosemary divided
    • 8 ripe tomatoes
    • 2 red onion
    • Salt and Pepper
    • 1 lime for serving

    Instructions
     

    Prevent your screen from going dark
    • Pre-heat the oven to 220°C/430ºF.
    • Peel and finely chop the garlic.
    • In a large flat dish, mix together, the garlic, juice and zest of 1 lime, 2 tablespoon of the olive oil and 1 tablespoon of the rosemary.
    • Add the tuna steaks and turn to coat in the marinade. Set aside.
    • Slice the red onions into thick slices and place in a shallow oven proof dish.
    • Slice the tomatoes lengthways and arrange on top of the onions.
    • Sprinkle over the remaining rosemary, season with salt and pepper and drizzle over the remaining olive oil.
    • Roast the tomatoes and onions for 20 minutes until tender.
    • On a high heat, heat a frying pan or griddle pan, then cook the tuna for 2-3 minutes a side. (or more if you don't like pink tuna)
    • Serve the tomatoes and tuna with extra sprinkling of black pepper and a wedge of lime.
    • Note: If the only tomatoes you can find are hard tart ones. You can sprinkle over 1 teaspoon of sugar to help the tomatoes sweeten and colour.

      i laughed so hard when i read your "broken" toe story. i dropped a thermos on my toe a few days ago and it hurt so bad!! it's all bruised, swollen, and the nail is blue already. tylenol extra strength wasn't touching the pain and it was throbbing so bad!! i got an x ray yesterday but haven't heard back. i'm not sure if it's broken but i've been wearing a boot and telling everyone that it is!! haha

        Fingers crossed it isn't broken. But just incase get your feet up and get waited on for a few days 😉
