Cut the potatoes in half or quarters (if they're large), place them in a mixing bowl with the olive oil, and toss them to coat.
Transfer the potatoes to a roasting tin, ensuring they are in a single layer.
Roast the potatoes for 45-55 minutes until golden and crispy.
As soon as the potatoes come out of the oven, toss them with the dill seasoning mix and serve. (see note 3)
Notes
Pick a medium starch potato like Yukon Gold, Dutch Cream, Desiree, Maris Piper, or Vivaldi.
You can buy dill seasoning in the stores, but I make my own blend with this recipe.
Sprinkling over the dill seasoning as soon as the potatoes come out of the oven means it will stick to the hot oil and infuse the potatoes with flavor.
