Curried Sausages is an Australian classic and an easy, delicious, and affordable meal for the whole family. Curried Sausage is as retro as it gets!! It is the food that so many of us remember from our childhood; it disappeared and became a bit "uncool," but I am bringing it back because it's tasty, quick, and easy to make, cooks in one pan, and the kids love it! It takes under 30 minutes and is a great one-pot meal. Serve it with rice, mashed potatoes, or fries!
Heat the oil in a large skillet or low casserole.1 tbsp oil
Cook sausages over medium heat until they are browned and cooked through. This will take around 6-8 minutes, depending on the thickness of your sausages.1.2 lb/ 550g sausages
Remove the sausages from the skillet and slice them into thick chunks. Cover with foil to keep warm.
In the same skillet, add the onion and cook for 2-3 minutes until translucent and starting to color on the edges.1 onion
Add curry powder and flour and stir well into the onions.1 tbsp curry powder3 tbsp flour
Gradually add the broth; the mixture will initially clump together like wet sand, but keep slowly stirring in your broth, and your curry gravy will come together smoothly.2 ¼ cups/ 530ml broth
Add the carrots, salt, and pepper and stir.1 carrot½ tsp salt½ tsp black pepper
Bring to a simmer and cook for 5 minutes.
Add the sliced sausages, peas, and corn, and bring back to a simmer. Cook for 2 minutes.⅔ cup/ 160g peas⅔ cup/ 160g corn
Serve immediately or allow to cool and store for later.
Notes
This weight is around 8 sausages. You can use any sausage for this recipe- beef, pork, chicken, or turkey sausages. You could even use a vegetarian sausage! Buy a good quality sausage as they taste much better and keep their shape better. For those in the US - You want to use sausage links or the pre-cooked sausages from the chiller section.
You can use any curry powder blend that you have available. However, each brand will have a slightly different flavor and taste. So pick one that you like.
