Fragrant Thai Beef Skewers with Hot & Sour Dressing
Tender Thai beef, cooked on the grill until smoky, juicy and pack with flavor. The Thai marinade makes the steak a little sweet and a little spicy, perfect for the outdoor grill. These Fragrant Thai Beef Skewers with Hot & Sour Dressing are a great summer recipe and one you'll come back to again and again.

For the marinade:
- 2 tbsp soy sauce
- 2 tbsp fish sauce
- 1 inch piece fresh ginger
- 4 garlic cloves - minced
- 3 tbsp lime juice
- 3 tbsp brown sugar
- 1 tsp sririacha
- 1 tbsp coconut oil
For the skewers:
- 1 1/2 lb skirt steak/flank steak
- 18 each bamboo skewers - soaked in water for 30 minutes
For the dipping sauce:
- 3 limes - juiced
- 1/4 cup fish sauce
- 1/4 cup sugar
- 1/2 cup water
- 3 cloves garlic - crushed
- 3 finely chopped thai bird chilies - add more or less to taste
For the steak:
Place the marinade ingredients in the food processor and whizz until you have a chunky paste.
Cut the steak into 1 inch strips
Mix the steak and the marinade together and place in the fridge for 4 hours.
When you are ready to cook get the grill super hot and whilst it is heating up thread a strip of beef onto each bamboo skewers.
Grill the beef skewers over a high heat for 1 minute on each side. Serve with the dipping sauce.
