You can change the measurement from US to metric at the bottom of this list

  • 12 kebab sticks
  • 1/2 cup extra strong coffee - cold
  • 1/2 tsp salt
  • 1 tbsp maple syrup
  • 2 tsp cayenne pepper (see notes)
  • 1 tsp red pepper flakes
  • 1 garlic clove
  • 1/4 tsp all spice
  • 1.1 lb chicken tenders
  • 1/2 cup sour cream

  • Start by soaking the the kebab sticks in a jug of water. This prevents them burning on the grill.
  • Pour the coffee, salt, maple syrup, chilli powder, chilli flakes and all spice into a large ziplock bag.
  • Crush in the garlic into the bag, then seal the bag and shake it about a bit to mix everything together.
  • Add the chicken tenders and place the bag in the fridge to marinade for 2-6 hours.
  • Preheat the grill to it's hottest setting.
  • Remove the chicken from the bag and thread each tender onto your soaked kebab stick. Lay them out of a baking tray.
  • Grill one each side for 3-4 minutes a side until just cooked through.

These hot and spicy skewers are hot! If you want to tone it down then use just 1 tsp of cayenne pepper.
