¼teaspoonground ginger
½teaspoonsalt
1.5kg/2lb pork shoulder/butt
Instructions
Add the passata, chicken stock, maple syrup, worcestershire sauce, apple cider vinegar and yellow mustard to the slow cooker and use a fork to combine.
Add the smoked paprika, onion flakes, black pepper, cumin, ginger and salt and then give it another stir.
Set the slow cooker on low.
Trim the pork of as much of the fat as you can and then add it to the slow cooker.
Push it down to make sure it is as covered as possible.
Cook on low for 6-8 hours until the meat is falling apart.
Take two forks and shred the pork. You can either do this in the slow cooker or if you have a non-stick coating on your slow cooker, remove the pork and do it on a chopping board.
Return the pork to the slow cooker and cook on high for a further hour.
Serve with bread rolls, salad, red onion....oh and maybe a spicy pickle or two :-)
Notes
The weight of the pork is approximate - a bit more or a bit less won't hurt
