This Charred Lemon, Rosemary and Coriander Gin & Tonic is something special! The flavours are so perfectly balanced and it makes a very beautiful start to the evening/afternoon. Well to any occasion!!! Have one at lunch time I won't judge just pour me one too!!!

Not sorry at all.
Because this addiction is completely okay. I mean lemons are packed with vitamin C, so it is a healthy addiction!! See what I did there 😉
Anyway back to this amazing Charred Lemon, Rosemary and Coriander Gin & Tonic!!!!!
The gin is lightly muddled with fresh rosemary and coriander seeds, which enhances the wonderful botanical flavours in the gin.
Coriander seed is actually used in the preparation of many gins, so it does work so wonderfully in this drink! I also love coriander seeds!!! The flavour is so savoury and warming!!! So that makes it wonderful too 😉
Did you know that coriander seed has a narcotic effect???
Yup!!! You read that right!
In fact the narcotic affects have earnt coriander seed the nickname 'dizzycorn'. So if you have one too many of these G&T's then blame the headache on the coriander seed 😉
Oh man I love those charred lemons!!!!!
So we have gin muddled with rosemary and coriander seed. Then we add the charred lemon. The sweet, sour and caramelised flavour of charred lemon!!! Honestly the flavour of lemons that have been blackened is amazing. I cannot say it often enough. If you haven't charred a lemon yet, get out your cast iron skilled (or heavy non stick fry pan) and get some lemons charring. You will thank me!!!
In fact you may cry with gratitude 😉 Yup they really are that good!!

The choice of tonic water is up to you, there are so many wonderful brands out there. I also should add that I have made this with supermarket own brand diet tonic water and I loved it just as much!!!
And as for the gin! A great easy to find option is Tanqueray London Dry which has the great dry herbaceous flavour that works fabulously here. But my personal favourite is Hippocampus Gin, which is a small batch gin made locally to me in West Perth. It has the great flavour of juniper and coriander and it is totally perfect in this Charred Lemon, Rosemary and Coriander Gin & Tonic

Charred Lemon, Rosemary and Coriander Gin & Tonic
Ingredients
- 1 lemon
- 2 sprigs rosemary
- ½ teaspoon coriander seed
- ½ cup gin
- 1 cup ice
- 1 ⅓ cup cups tonic water
- pinch mixed peppercorns
Instructions
- Put a cast iron fry pan or heavy non-stick pan over a high heat and allow it to get hot.
- Cut the lemon into quarters and place them cut side down in the hot pan. Once the lemon is charred turn to char the other cut edge.
- Remove from the pan and set aside to cool.
- put the rosemary, coriander seeds and gin into a cocktail shaker or measuring jug.
- Use a wooden spoon to lightly bash the aromatics.
- Divide the ice between two large round bottomed glasses.
- Strain the gin into your glasses.
- Top up with tonic water, stir briefly and add in your charred lemon quarters.
- Serve immediately with a small pinch of whole peppercorns.

Question: make ahead tips for charred lemon? Would love to serve at a party but no time to make charred lemons when guests are here. How far ahead can i make them and can i store in fridge? Can’T wait to try this!!

I have made them up to a day before and they have been fine.
They go a little sticky but the flavour is still perfect 🙂
