    Blueberry Apple Mojito. A delicious and refreshing drink.

    As we are thousands of kilometres apart, (14,560km to be exact), I can't bake you a cake, well I could but then I would have to eat it, so in your honour I am making you a Blueberry Apple Mojito. Actually I made this yesterday as I wanted to get this posted before you wake up and 12:30 is too early for me to drink rum, I am not a pirate 😉

    So now your own personal birthday drink is online ready for when you wakes up and you can have one with brunch. Hey it's your birthday Cece, no one can complain if you start drinking early today. Anyway I am sure a cocktail is the only civilised thing to drink with a birthday brunch.

    INGREDIENTS

    Serves 2

    • 20 blueberries (fresh or frozen)
    • 4 ice cubes (or just 2 if using frozen blueberries)
    • 4 tablespoons freshly squeezed lime juice
    • 60ml white rum
    • Sparkling apple juice.
    • lime slice to garnish
    • 8 blueberries to garnish
     
    Directions
    1. Add the blueberries and ice to a cocktail shaker and shake vigorously to break them down.
    2. Add the lime juice and rum to the shaker and give it another good shake to combine everything and chill the rum.
    3. Use a strainer to pour the blueberry rum into a glass.
    4. Top up with sparkling apple juice and garnish with a slice of lime and a skewer of blueberries.
